Today it's the third most consumed condiment in the world after salt and pepper.

Your virtues for our health are numerous. Low in fat and calories, good for fighting colds and aiding digestion, it strengthens our immune defenses and is rich in vitamins and minerals. It promotes the absorption of iron and is said to have anti-cancer properties. Well, you should eat at least a jar a day to really enjoy its benefits, but a little every day is already not so bad!

There are several mustards to choose from depending on the dish being cooked:

  • strong mustard : it is the famous Dijon's mustard ! Based on brown and black mustard seeds, it is spicy and spicy. Perfect for meats and sauces.
  • Sweet mustards : the Alsatian mustard, based on white seeds, and the Meaux mustard, slightly crushed and grainy, are more delicate and less pungent. They accompany fish and raw vegetables, and are ideal for vinaigrettes.

The industrial production of mustard is rather simple. After cleaning and crushing the mustard seeds, soak them for several hours in vinegar or verjuice (grape juice that is still green), stirring regularly. They are then ground before being passed through a centrifuge to separate the paste obtained from the seed envelope (except for old-fashioned mustard). Leave to stand for 2 or 3 days, mix again and then put in a pot. Tadam, mustard ✨!

Once the mustard seeds have been soaked in the cider vinegar, mix thoroughly to obtain a fine texture. Pass through a sieve to remove the remaining seeds. Flavor or not with one of the spicy mixtures (a pinch is enough). Mix, pour into the jar and store for 24 to 48 hours in the refrigerator, leaving the jar open to reduce the spiciness. Your mustard is ready to eat and will keep for several weeks in the fridge. Easy, right?

The basic mustard recipe

Now that you've used your kit, you might want to make your own mustard again! Here is a small basic recipe for 150g of mustard:

  • 30g mustard seeds, preferably organic
  • 30g cider vinegar
  • 20g sunflower oil
  • 20g of flour
  • 30g of water
  • 1 teaspoon of turmeric
  • 1 teaspoon of salt
  • 2g of pepper
  1. Crush the mustard seeds using a mortar or a blender. In a bowl, combine the seeds, water and vinegar. Leave to marinate overnight.
  2. The next day, add the oil, flour and turmeric, then salt and pepper. It is at this stage that you can incorporate ingredients for flavor your mustard : garlic, Provencal herbs, sage, tarragon… Have fun with the flavors! Mix for a long time to obtain a fine texture. It's ready !

Pour your mustard into a jar and reserve in the refrigerator. To keep its beautiful color and creamy texture, cover it with a little oil.
